With the creaminess of the avocado and natural flavorings, this Avocado Caesar Salad Dressing gives you all the goodness of your favorite salad in a much lighter, more nutritious way. I may say I want to go back to summer for this one but, let’s be real, delicious salads do the job year-round.
So, really, forget just about everything I said until I got to the food portion. I don’t want to go back to August 2020 and I certainly don’t want to go back to 2019, graduate school and that lovely, aforementioned gentleman. I’ll just stay right here with all the delicious goodness!

NOT-SO-PRO TIPS
If you want extra smooth dressing without lots of mincing or food processing, you can use garlic powder or a jarred garlic instead of fresh. I drizzled this dressing over a spinach salad with chicken but I’ve also dipped carrots and broccoli in the leftovers and even roasted some veggies in it!
Feel free to double the recipe if you want to use up an entire avocado. You can store the dressing for up to 3 days in a sealed container in the fridge.
