Cajun Spiced White Beans With Turkey Sausage
Ingredients
- 1/2 teaspoon olive oil
- 1/2 cup chopped onion from about 1/4 small onion
- 2 cloves garlic minced
- 1/4 cup celery chopped
- 15.5 oz can navy beans in liquid
- 1 teaspoon cajun seasoning
- 13.5 oz can lite coconut milk
- Salt
- Pepper
- 12 oz fully cooked smoked poultry sausage sliced
Instructions
- STEP 1In a medium skillet, heat olive oil
- STEP 2Add onion, garlic and celery and cook, stirring regularly, for about 2 minutes
- STEP 3Pour in navy beans and liquid, cajun seasoning and coconut milk
- STEP 4Bring to a simmer and cook, stirring regularly until most liquid is absorbed and mixture reaches desired consistency, for me this took about 20 minutes
- STEP 5Season to taste with salt and pepper then stir in poultry sausage and cook for 1-2 minutes until heated through

The consistency of this dish really comes down to your preference! If you like full, unmashed beans, boil for less time than recommended. If you prefer one, uniform consistency, boil for longer

I’ve always been able to find some form of cooked, smoked turkey sausage or turkey kielbasa at my supermarket. It’s usually in the same area as the bacon in my store. If you can’t find one, though, you can use regular, cooked turkey sausage or regular smoked sausage
The beans themselves are flavorful enough to eat on their own if you don’t or can’t eat sausage! You can also replace it with mushrooms or chicken for other protein.
