You can make this one with only a handful of ingredients and still end up with a healthful meal ready to satisfy you for the entire work week.
Plus, it’s just plain pretty. So, I guess “colorful” can have a whole lot of different meanings. On the one hand, it can mean a potentially inappropriately open stranger. On the other, though, it could just mean an interesting new friend.
And, of course, it might just refer to a delicious meal. I’ll let the rest of you debate the first two options. All I know is that this particularly colorful dish just also happens to be incredibly tasty.

Chicken and Rainbow Pepper Sheet Pan
Ingredients
- 1 lb boneless skinless chicken breast, sliced into thin pieces
- 2-3 sweet bell peppers, chopped
- 1 cup onion chopped
- 3 cloves garlic minced
- Palmful fresh basil torn
- ¼ cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 teaspoon Sriracha optional
- ½ teaspoon onion powder
- Salt
- Pepper
Instructions
- Step 1 Preheat oven to 400 degrees
- Step 2 Combine chicken, peppers, onion, garlic and basil on a baking sheet. Season all with salt and pepper
- Step 3 In a small saucepan, combine balsamic vinegar, honey, Dijon mustard, Sriracha if using and onion powder over medium heat.
- Step 4 Bring to a boil then reduce heat and simmer, stirring regularly until sauce begins to thicken, about 4-6 minutes. Set aside
- Step 5 Bake chicken and vegetables in the preheated oven for 10 minutes
- Step 6 Pour about half of balsamic glaze over chicken and vegetables, toss well then return to the oven for an additional 10 minutes or until vegetables are tender and chicken is fully cooked through
- Step 7 Toss sheet pan with remaining sauce to serve

One of the best parts of this recipe is your ability to customize it to your preferences! You can switch out the chicken for shrimp, tofu or steak or any of the veggies for your favorites. Other than possibly adjusting some cooking times, you’ll still come out with a delicious meal
I often eat this easy, sheet pan meal all on its own but if you’d like to bulk it up, try adding some toasted bread for dipping or a simple green salad stirred in. If you find your balsamic drizzle to be too thick, you can loosen it up with a tablespoon or two of chicken or other broth. Simply stir it in over low heat until you reach a desired consistency.
As your vegetables cook, they are likely to release some water. Before tossing your baking chicken and veggies, pour excess liquid off of your baking sheet for the best texture.
