It is a versatile dish that instantly makes me think of warm weather and summer time. Add this Crunchy Cucumber, Bacon and Avocado Chicken Salad to a sandwich or salad or even use it as a protein packed dip on your next picnic.
Trust me when I tell you, though, this Crunchy Cucumber, Bacon and Avocado Chicken Salad is something you don’t want to ignore.

Crunchy Cucumber Bacon and Avocado Chicken Salad
Ingredients
- 4 slices uncooked bacon
- 12 oz uncooked chicken breast cubed
- Salt
- Pepper
- 1 tablespoon lime
- 1 ½ cups cucumber from about 1/2 a large cucumber, cubed
- 2 tablespoons reduced fat mayonnaise
- 1/4 cup red onion chopped
- 1 avocado cubed
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1 capful white vinegar optional
- 1 green onion chopped
Instructions
- STEP 1In a medium skillet, cook bacon over medium heat until crisp, about 3 minutes a side
- STEP 2Remove bacon from skillet but do not remove grease. Add cubed chicken pieces and season with salt and pepper.
- STEP 3Cook over medium heat until chicken is cooked through, about 5 minutes, stirring occasionally
- STEP 4Crumble bacon into a large bowl. Add cooked chicken, lime juice, cucumber, mayonnaise and red onion. Stir well
- STEP 5Add avocado, cumin and garlic powder to bowl and stir gently to combine
- STEP 6If using, pour vinegar over entire mixture
- STEP 7Garnish with chopped green onion

Both the lime juice and vinegar should help prevent the avocado from browning. It also helps to put a piece of plastic wrap between the storage container and its lid, pressed down flush with the Crunchy Cucumber, Bacon and Avocado Chicken Salad.
Don’t be scared off by the fat in this dish! A lot of it comes from the avocado making it healthy fat. I often eat a serving of this Chicken Salad on a Sandwich thin but you can enjoy it on any bread product, in a salad, as a dip with pita chips or just on its own.
