This Light and Easy Beef Stir Fry is full of protein, nutrients and flavor making it a healthy, satisfying, one pot meal you’re not going to want to miss! Seriously, who doesn’t want an excuse to eat steak for lunch on a weekday afternoon?
Plus, it’s freezer friendly and made all in one pan on the stove top…fewer dishes and less time spent is always a win in my book! It’s true, there are countless forms of danger both in dating and also in the kitchen. For the moment, though, personally, overeating will continue to be my biggest risk!
Light and Easy Beef Stir Fry
Ingredients
- 16 oz lean beef sliced
- 2 tablespoons cornstarch
- 1 tablespoon whole wheat flour
- 2 bell peppers chopped
- 12 oz broccoli florets chopped
- 1/2 small onion chopped
- 2 cloves garlic minced
- 1/2 cup low sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sriracha
- 2 teaspoons lite rice vinegar
- 1 tablespoon brown sugar
- 2 teaspoons ginger paste or fresh ginger
- Salt
- Pepper
Instructions
- STEP 1In a medium bowl or plastic bag, toss beef with cornstarch and flour
- STEP 2Spray a large skillet with cooking spray. Add coated beef and begin to cook over medium heat for about 2 minutes
- STEP 3Add peppers, broccoli, onion and garlic to skillet. Stir to combine
- STEP 4While beef and vegetables continue to cook, combine soy sauce, oyster sauce, hoisin, sriracha, rice vinegar, brown sugar and ginger
- STEP 5Pour sauce over stir fry and stir to combine
- STEP 6Season to taste with salt and pepper
- STEP 7Continue to cook over medium until beef is cooked to desired temperature, vegetables are softened and sauce thickens slightly, for me this was about 3 additional minutes
