One Pan Shrimp Scampi Caesar Tacos
Made with only a few ingredients and a single dirty dish, these One-Pan Shrimp Scampi Caesar Tacos are flavorful, light, filling and incredibly fun. They come together quickly, too, making them the perfect work-night meal.
Ingredients
- Tsp olive oil
- 1 clove garlic minced
- 4 oz shrimp
- Splash lemon juice
- ¼ tsp dried rosemary
- Crushed red pepper optional
- ¼ cup baby spinach
- 1 green onion chopped
- 1 tablespoon light Caesar dressing
- ½ tablespoon parmesan cheese
- 1-2 high fiber tortillas I use Mission Brand Carb Balance Flour tortillas
Instructions
- Step 1 Heat olive oil in a small skillet over medium-low heat. Add garlic and cook for 2-3 minutes
- Step 2 Add shrimp to skillet and heat until fully cooked through, about 2 minutes per side. Shrimp should be fully pink
- Step 3 Remove pan from heat then stir in lemon juice, rosemary and crushed red pepper if using
- Step 4 Combine spinach, green onion, Caesar dressing and parmesan cheese. Divide evenly between tortillas
- Step 5 Divide shrimp mixture over prepared greens

I always keep a bag of frozen shrimp on hand so that I never have to worry about freshness! Don’t be intimidated by the peeling, either, once they’re thawed, it’s very easy to get the shell off.

Caesar dressing has always been one of my favorites but it can take a salad from healthy to not so much awfully quickly. I like Newman’s Caesar vinaigrette, or, you can also use this Avocado Caesar Salad Dressing.
