This Sweet Potato and Chicken Stir Fry balances the tangy, salty Pad Thai Sauce with natural sweetness to make a nutritious, delicious and still inexpensive meal. Though chopping all of the veggies can take some time, once that is done, this stir fry also comes together extremely quickly and easily. It’s also perfect for meal prep as the flavors only continue to meld over time.

Sweet Potato Chicken Stir Fry in Pad Thai Sauce
Ingredients
- 2 large or 3 small sweet potatoes weighing about 20 oz together
- 1 tablespoon sesame oil
- 1 lb boneless skinless chicken breast chopped
- 3 cloves garlic minced
- ¼ small onion sliced
- 10 oz bag rainbow slaw
- Salt
- Pepper
- 3 tablespoons peanut butter
- 3 tablespoons soy sauce
- 1 tablespoon lime juice
- ½ tablespoon white vinegar
- ½ tablespoon fish sauce
- 1 teaspoon sriracha optional
- 2 eggs
Instructions
- STEP 1Wash and peel sweet potatoes then slice into fry like shapes
- STEP 2Heat sesame oil in a large skillet or wok then add sweet potatoes and chicken. Toss to coat
- STEP 3Add garlic, onion and rainbow slaw to pan and continue to cook until potatoes soften and chicken is cooked through, about 6-8 minutes. Season with salt and pepper
- STEP 4In a small bowl, whisk together peanut butter, soy sauce, lime juice, vinegar, fish sauce and sriracha, if using
- STEP 5Pour sauce over chicken and vegetables and stir to combine
- STEP 6Crack eggs into pan and toss well, scrambling the egg throughout the dish. Continue to cook over medium heat for about 5 minutes to allow eggs to cook fully.
NOT-SO-PRO TIPS
If you have a spiralizer, feel free to use it to make your sweet potato “noodles” instead of chopping! You can also buy pre-sliced/spiralized sweet potato at many supermarkets
My grocery store sells broccoli and rainbow slaws in the bagged produce section. They are basically mixtures of veggies cut into thin, “slaw” shapes, similar to coleslaw mix. If you can’t find rainbow slaw, broccoli slaw, coleslaw mix or even just a bag of shredded cabbage will work. If you like a nuttier sauce, increase peanut butter to 1/4 cup. You can also use another nut butter if preferred!
Fish sauce is a salty, flavorful sauce used in many East Asian cuisines and should be easy to find in the “Asian” or “Thai” section of your store. If you cannot find it or prefer not to use it, you can sub in oyster sauce or even extra soy in a pinch. If you want some extra crunch, add a few tablespoons of fresh peanuts to your stir fry or sprinkle on top as a garnish!
